Birdhouse - a restaurant in Erie, Colorado bringing together rum, tacos and ramen. It’s weird but good… so good people are going to wonder why this combo hasn’t been done before. Rum, tacos and ramen are the focus but Birdhouse doesn’t want to be Pigeon holed. They aim to have a larger customer draw than the neighborhood. The food and concept is elevated enough to draw people from Boulder, Louisville, Lafayette and beyond.
